finnish strawberry pancake

After rising early last week I sat down with a cup of coffee and started reading the latest posts on my favorite blogs. I found this marvelous breakfast recipe from thethankfulheart. Having all the ingredients on hand I stood up and made Rhonda’s finnish pancakes. Right then and there, I made it and it was out of this world. Rhonda used raspberries in her pancake and I only had strawberries. However, I am certain these finnish pancakes are wonderful whatever fruit is used. I imagine peaches a little later in the season.
You know this is good when you leave it on the stove with one piece missing only to come back an hour later and it was gone! Yes, the 15 year old of the house got ahold of it! He said he couldn’t stop eating it after pouring pure maple syrup on top.
Here is the recipe exactly how Rhonda posted it. However, I know you would enjoy a visit to her blog.
- 1 cup flour
- 2 tab. sugar
- 1/4 tsp. salt
- 2 cups milk
- 1/4 cup melted butter
- 2 eggs
- 1 tsp. vanilla
- 6 oz. box of raspberries [or in this case, strawberries](about a cup)
- 1/4 cup sugar
In a mixing bowl stir together the flour, sugar and salt. Then whisk in the milk, melted butter, eggs and vanilla. Pour is it all into a 10″ baking dish sprayed with cooking spray. Sprinkle the raspberries and sugar on top and pop it into a 400 even for 45 minutes until it’s puffy and nicely browned.
I have a similar recipe that my family loves! I think it is the melted butter that gives it that extra special taste :) I’ve got some blueberries so I think I’ll try using them – thanks for the great post!

Thank you Rhonda! I loved this so much. I was talking to a friend about it and she makes something similar called Dutch Baby. I love how this puffs up then falls into a custard-y, crispy edged pancake. This may turn into my “go to” weekend breakfast. It’s nice to have something like this when you have young ones around.

I’ve wanted to make this pancake for a while… I’m a big fan of Rhonda’s recipes :) Like you, I’ve also read a few different recipes for Dutch Baby and the idea of a crispy-edged, custard-centre pancake sounds absolutely divine. Thanks for the inspiration. Beautiful photo! xx
Thank you…. The inspiration is from Rhonda. She passed it down through me. :) I didn’t really know what to expect baking a pancake. And honestly I didn’t really think the ingredients through and what the results would be. I was so pleasantly surprised! I love this baked pancake. I plan on keep it in high rotation for weekend breakfast. Even without fruit with lemon / sugar! Awesome.

hahaha. I know we share the same “groove” and not venturing into the sweets too much. I’m going to make some effort though.
I’m not much of a breakfast person but if anything would make me change my ways, it would be this pancake. It looks delicious and I love that it’s baked — so much easier for us folk that “wake up hard.” :)

Sounds like the perfect pancake to me. I can never be bothered to clear up the mess after pan-fried. Or is that just me being a klutz in the kitchen, as usual??
I feel the same way. Making a stack of pancakes is messy and you have to keep the stack warm while you are make more. Too much fuss. I can’t picture you a klutz in the kitchen. :)

As I mentioned earlier, I just had this for lunch with my girls and it was fantastic! My 13 year-old daughter Charlotte said it was delicious and that I need to make this again. Just one question… is it supposed to be somewhat custardy inside? Mine was and I think that’s one of the things we loved about it, the custard-like texture. Just wondering…
Yes! That’s it. Custard-y for sure. That’s what I really enjoyed about it, and the crispy edges… So glad you all enjoyed it. It’s such an easy recipes and I normally have all the ingredients on hand. Did you put maple syrup on it? Oh, I mean….liquid gold? :)

This looks divine! Came over from another blogger’s, glad I did. Everythign looks stunning! I thought I’ve had my fair share of pancakes from around the world- the English one (flat, more liek crepes), the American fluffy ones, the Dutch ones, and the Chinese ones (usually savoury). It’s weird, how so many cultures all have different versions of the same thing, and how creative each can be! I love this! going to try the Finnish version soon! x
