apricot thyme galette

With a nice bunch of apricots on hand I decided to bake this tangy, scarcely sweet galette for dessert. I have a weakness for galettes. I love the ease of preparation and the rustic look with it’s imperfect folds and uneven edges. And I’ve been a little obsessed with adding herbs to baked goods and desserts. Thyme pairs quite nicely with apricots in this charming galette.
I always look forward to the weekend because I love preparing dinner when I have time to work slow and relaxed. Saturday is ideal to cook something a little more complicated and time consuming. And that was exactly what I had in mind last Saturday. I made the apricot galette in the morning and went about my day expecting to return to the kitchen early afternoon to prepare dinner; calm and collected.
It’s a good thing I made the galette in the morning because time slipped away and as it turns out, this was dinner last Saturday night, and we loved it. Recipe from Cooking Light Magazine.
I n g r e d i e n t s
- single pie crust recipe
- 1-1/2 tablespoons cornstarch
- 2 pounds firm ripe apricots, pitted and cut into quarters
- 1/4 cup apricot jam
- 1 tablespoon honey
- 2 tablespoons turbinado sugar
- 1 tablespoon fresh thyme leaves
Preheat oven to 400°F. Place your prepared pie dough onto a a baking sheet lined with parchment paper. Combine cornstarch and 2 tablespoons sugar; sprinkle over dough, leaving a 2-inch border. Arrange apricots spikelike on top of cornstarch mixture, leaving a 2-inch border. Fold edges of dough over apricots (dough will only partially cover apricots). Combine jam and honey and warm either on stovetop or microwave. Brush jam mixture over apricots and dough edges. Sprinkle with turbinado sugar. Bake at 400°F for 35 minutes or until crust browns. Remove from oven, spring with thyme. Cool 10 minutes.

It does seem too short. Cherries have had a really long season this year! And the peaches just arrived at the market…exciting!

Lovely. Funny how Saturdays seem like there is so much time for cooking but usually that is the day I end up cooking the least complicated of dinners.
Some of my favorite Saturdays are spent in the kitchen, all day! Somehow I don’t manage to do that very often. Especially if the weather is nice. Galette’s are good for dinner!

This looks so beautiful. Such gorgeous photos! I love that there’s a hint of savory thyme in there. This gallette doesn’t seem loaded with heavy ingredients as they sometimes can be. I would make this, pure and simple. It is kind of lovely to bake on weekends, right. Great seasonal recipe!

Hi Saucy! It seems summer is the only time I manage to make anything sweet. Must be the fruits. I love cooked peaches, apricots, peaches and berries. Seems like grilled peaches are trending heavily right now. :)
Yes grilled peaches seem to be everywhere! I’ll just have to cook up marmalade-y things here until stone fruits appear, on second thoughts that’s not half bad…

I love using herbs on fruit but I must say I was a bit skeptical of thyme on apricots. However, it’s wonderful! A pleasant surprise. We’ve been known to have popcorn for dinner occasionally too! :) You?

I’ve been especially intrigued by apricots this year, having never been interested before. Have half-a-flat left after an upside-down-cake and now I know what to do with them :-) The thyme is a fantastic addition.

I love apricots with rosemary, but haven’t yet tried them with thyme. I bet this galette was really delicious, and I love that it isn’t too sweet; the tiny addition of sugar probably enhances the natural sweetness of the apricots, which I think is just enough.
Hi Darya! I’ll have to try apricots with rosemary, sounds like a a delicious combination. Hard to imagine I have had all these herb plants for years and this is the first year I have started using them with sweets. You are right about the tiny addition of sugar in this galette that is what really attracted me to this recipe. Love that the natural sweetness of the apricots are allowed to shine without too much added sugar. :)

Got to ask! Does the mixture of cornflour and sugar act as a sealant of some sort so the juice from the apricots doesn’t leave the pastry soggy? I’ve never made a galette for that reason alone. And I’ve recently bookmarked two crostata recipes, wondering if that would happen. To the extent I’d thought of blind baking the base and, when cool, slapping on a layer of melted chocolate before filling it with fruit. Hmm, now I’m hoping I won’t have to do that. Hold on, I still like the idea of the chocolate! :) Oh, and thyme with apricots…have never tried that. And the latter are very cheap here right now.
Ah! I’m so glad you mention this! I have been resisting buying cornflour for months and months. I don’t ever use it as a thickening agent, just don’t really care for the consistency it creates. However, I have been baking quite a few fruity pies and the recipes always call for it. When I saw this recipe a light went on! I thought it has to be a barrier to prevent the crust from getting soggy. Unfortunately in this particular galette I rolled the crust out to thin to really notice. I didn’t find it particularly soggy, just thin. I have read this does work as a sealant though. A few months ago I baked an apple galette and the recipe called for 1/4 cup apricot preserves as the first layer and I thought that worked very well as a barrier keeping the crust nice and firm, but then apples don’t release much liquid do they! I’d love to hear how your crostata’s turn out, and I too like the idea of melted chocolate on the base. Especially sounds good with apricots!
This galette looks so elegant and yummy. I recently made a crumble with apricots and instead of thyme I added the fresh pepper meant leaves, which was great. Never tried it with thyme though, and I guess I will have to this time :-D lovely pictures!
